Sparkling Elderflower Drink

Light, floral, refreshing, and perfect for a warm afternoon. This sparkling elderflower drink is made with elderflower syrup or cordial, fresh lemon, ice, and bubbly water for a simple farm-style drink that feels a little fancy.

Ingredients

  • 3 to 4 tablespoons elderflower syrup or elderflower cordial
  • 2 cups chilled sparkling water, club soda, or lemon sparkling water
  • 1 tablespoon fresh lemon juice
  • Ice cubes
  • Lemon slices, for garnish
  • Fresh mint, for garnish
  • Optional: a few fresh berries for colour
Tip: Start with less elderflower syrup and add more to taste. Elderflower has a beautiful floral flavour, but it can become too sweet if overdone.

Instructions

  1. Fill two glasses with ice.
  2. Add 1 ½ to 2 tablespoons of elderflower syrup or cordial to each glass.
  3. Add a splash of fresh lemon juice to brighten the flavour.
  4. Top each glass with chilled sparkling water.
  5. Stir gently so you do not flatten the bubbles.
  6. Garnish with lemon slices, mint, and a few berries if desired.
  7. Serve immediately while cold and sparkling.
Serving idea: This is a lovely non-alcoholic drink for garden parties, brunches, summer dinners, or an elderberry farm open house.

Lemon Elderflower Spritz

Add extra lemon juice and garnish with a lemon wheel for a brighter, citrus-forward drink.

Berry Elderflower Sparkler

Add a spoonful of elderberry syrup or a few muddled berries for a soft purple colour and berry flavour.

Herbal Garden Version

Add mint, basil, or rosemary for a fresh garden twist that pairs beautifully with the floral elderflower.

Food Safety Note

Use properly prepared elderflower syrup or cordial. Avoid using leaves, stems, bark, or unripe berries in recipes. When harvesting elderflowers, gently remove the flowers from the stems before preparing your syrup or cordial.
