Elderberry Thumbprint Cookies

Elderberry Thumbprint Cookies Recipe
Ingredients
- 1 cup unsalted butter, softened
- 2/3 cup granulated sugar
- 2 large egg yolks
- 1 teaspoon vanilla extract
- 2 cups all-purpose flour
- 1/4 teaspoon salt
- 1/2 cup elderberry jam or elderberry jelly
- Optional: powdered sugar for dusting
Instructions
- Preheat oven to 350°F. Line a baking sheet with parchment paper.
- In a large bowl, cream together the softened butter and sugar until light and fluffy.
- Mix in the egg yolks and vanilla extract.
- Add the flour and salt. Mix until a soft dough forms.
- Roll the dough into small balls, about 1 tablespoon each, and place them on the prepared baking sheet.
- Use your thumb or the back of a small spoon to gently press an indent into the centre of each cookie.
- Spoon a small amount of elderberry jam or jelly into each indent.
- Bake for 12–14 minutes, or until the edges are lightly golden.
- Let cookies cool on the baking sheet for 5 minutes, then transfer to a cooling rack.
- Once cooled, dust lightly with powdered sugar if desired.
Tips for Best Results
- Use a thicker elderberry jam or jelly so the filling stays neatly in the centre.
- Do not overfill the cookies. A small spoonful is enough.
- If the dough feels too soft, chill it for 20–30 minutes before baking.
- For a slightly richer flavour, add 1/2 teaspoon almond extract along with the vanilla.
- Let the cookies cool before moving them too much, as the jam centre will be hot.
Storage
Store elderberry thumbprint cookies in an airtight container at room temperature for up to 4 days. Place parchment paper between layers to keep the jam centres neat.
These cookies can also be frozen. For best results, freeze them in a single layer first, then transfer them to a freezer-safe container.
