Elderberry Dessert Sauce

A rich, glossy elderberry sauce that turns simple desserts into something special. Spoon it over cheesecake, ice cream, pancakes, waffles, yogurt, or pound cake.

A Simple Sauce with Big Elderberry Flavour

This elderberry dessert sauce is deep purple, lightly tart, and beautifully sweet. It’s the kind of recipe that feels fancy but is very easy to make. Start with elderberry juice, fresh berries, or frozen berries, then simmer with sugar and lemon until it becomes a smooth, spoonable sauce.

It’s especially good over vanilla ice cream, cheesecake, pancakes, waffles, crepes, yogurt bowls, and chocolate desserts.

Ingredients

  • 2 cups elderberry juice, or 3 cups frozen elderberries plus 1 cup water
  • 1/2 to 3/4 cup sugar, adjust to taste
  • 1 tablespoon lemon juice
  • 1 teaspoon lemon zest, optional
  • 1/2 teaspoon vanilla extract, optional
  • 1 tablespoon cornstarch
  • 2 tablespoons cold water

Instructions

If Using Elderberry Juice

  1. Add elderberry juice, sugar, and lemon juice to a saucepan.
  2. Bring to a gentle simmer over medium heat, stirring until the sugar dissolves.
  3. In a small bowl, mix cornstarch with cold water to make a slurry.
  4. Slowly stir the slurry into the simmering sauce.
  5. Continue cooking for 2 to 4 minutes, until the sauce thickens and looks glossy.
  6. Remove from heat and stir in vanilla, if using.
  7. Let cool slightly before serving. The sauce will thicken more as it cools.

If Using Frozen Elderberries

  1. Add frozen elderberries and water to a saucepan.
  2. Simmer for 15 to 20 minutes, stirring occasionally.
  3. Mash the berries gently as they cook.
  4. Strain through a fine mesh strainer to remove seeds and skins.
  5. Return the elderberry juice to the saucepan.
  6. Add sugar and lemon juice, then continue with the thickening steps above.

Serving Ideas

  • Drizzle over vanilla ice cream
  • Spoon over cheesecake
  • Serve with pancakes, waffles, or French toast
  • Swirl into yogurt or oatmeal
  • Use as a topping for pound cake or angel food cake
  • Pair with chocolate cake or brownies
  • Add to a dessert board with fruit and whipped cream

Make It Your Own

For a brighter sauce, add a little extra lemon juice. For a warmer flavour, add a pinch of cinnamon or a tiny pinch of cloves while the sauce simmers. For a smoother, pourable sauce, use less cornstarch. For a thicker topping, simmer a little longer after adding the slurry.

Storage

Store elderberry dessert sauce in a clean jar or sealed container in the refrigerator for up to 1 week. Reheat gently before serving, or enjoy it cold over yogurt, ice cream, or cheesecake.

This sauce can also be frozen in small containers for later use.
